I use a smoke-infuser every week to smoke my weekly grated cheddar cheese, meats, sauces and some vegetables.  I also discovered that "smoking" some foods kill mold, fungus and bacteria extending their refrigerator life.  I bought 9 different kinds of wood shavings to experiment with.  I found that I liked the smoked flavor on many kids of food including cheese, rice, all kinds of meat and sea food, sauces, baked items and some vegetables.

I started with one of these low-cost infusers but using it every week wore it out in less than a year and I graduated to a more expensive model as you can see from my kitchen photos below.  Depending on how often you find yourself smoke-infusing foods you may decide to upgrade also.

This infuser needs 2 AA batteries.  You'll need to purchase the smoking-dome as shown in the photo as well.  You can also try smoking with ziplock bags.  Remember that for smoke to get in the clear air must first escape through small slits in bags or through a soft seal with the smoking dome.  You'll figure it out.  I use a butane lighter to ignite the wood shavings.   I would not suggest young children use the lighter as they may use it to light things around the house!!!!  All children are fascinated by fire.  Reserve "smoking" for the older kids but the younger kids can watch.
